How to Make Sushi Rice in a Rice Cooker

I love going out for sushi once in a while, but I realized that I can get the same ingredients locally and make a ton of sushi at home for a fraction of the cost.

Plus, I don’t have to get ready to go out. Sometimes, I just want to enjoy sushi and look like a homeless person.

Here is a recipe to make perfect fluffy and fragrant sushi rice with a rice cooker for all your sushi-making adventures at home.

This recipe makes about 4 cups of cooked rice, perfect for about 6 servings of sushi.

How to Make Sushi Rice in a Rice Cooker

What You Will Need

To make sushi you will need the following ingredients and equipment.

Sushi Rice

When making sushi rice, use either short-grain or medium-grain rice. I like to use CalRose or Kokuho Rose rice. Both are medium grain rice. They both work great for sushi rice, and you can find them just about anywhere.

Medium-grain and short-grain rice are often combined into the short grain category. Short grain rice is short and stubby. When cooked, it’s plump, chewier and stickier than its long-grained counterpart. The sticky texture soaks up the vinegar-salt mixture nicely and the reason it works well for sushi rice.

Rice Vinegar, Salt and Sugar

This is the mixture that is poured over cooked rice to turn regular rice into sushi rice.

Rice Cooker

You can use any rice cooker. Here I’m using Zojirushi Fuzzy rice cooker, one of my favorite brands that sings to you when rice is done.

  1. Rinse the Rice: Place the rice in a fine mesh strainer and rinse under running water until the water runs clear. Alternatively, you can put the rice directly in the rice cooker bowl, add water, swirl the rice around, and tilt the bowl to drain the water. Repeat until the water is clear.
  2. Prepare the Vinegar Mixture: In a microwave-safe bowl, add rice vinegar, sugar, and salt. Heat the mixture in the microwave for 30 seconds, or until sugar has dissolved. Note that the salt may not fully dissolve. You can alternatively do this on the stovetop in a small saucepan until sugar dissolves.
  3. Season the Cooked Rice: Once rice is cooked, pour the vinegar mixture over the rice. Using a rice paddle, incorporate the mixture into the rice with a slicing motion to prevent breaking the grains.
  4. Cool the Rice: Allow the rice to cool slightly before using it for sushi. Keep a large bowl of water nearby to wet your hands while handling the rice. This will prevent the rice from sticking to your hands.

    I made some rice balls and draped a piece of Smoked Salmon on top and my picky 15-year-old INHALED it.
