Follow these simple steps to create perfectly fluffy and fragrant sushi rice, ideal for all your sushi-making adventures. This recipe makes about 4 cups of cooked rice, perfect for about 6 servings of sushi.

- 1 1/2 cups sushi rice (or 2 rice cooker cups, I'm using Nishiki medium grain)
- 1 3/4 cups water
- 3 tablespoons rice vinegar
- 1 tablespoon granulated sugar
- 1/2 teaspoon sea salt
Instructions
- Rinse the Rice: Place the rice in a large fine mesh strainer and rinse under running water until the water runs clear. Alternatively, you can put the rice directly in the rice cooker bowl, add water, swirl the rice around, and tilt the bowl to drain the water. Repeat until the water is clear.
- Prepare the Vinegar Mixture: In a microwave-safe bowl, add rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds, or until the sugar has dissolved. Note that the salt may not fully dissolve. You can also add these ingredients directly to hot rice.
- Season the Cooked Rice: Once rice is cooked, pour the vinegar mixture over the rice. Using a rice paddle, incorporate the mixture into the rice with a slicing motion to prevent breaking the grains.
- Cool the Rice: Allow the rice to cool slightly before using it for sushi. Keep a large bowl of water nearby to wet your hands while handling the rice. This will prevent the rice from sticking to your hands.
