Garlic and Soy Oven-Roasted Thick Pork Chops

Garlic & Soy Oven-Roasted Pork Chops (Guaranteed Moist & Tender)

This recipe is perfect for thick cuts of bone-in pork chops, ensuring they are juicy and tender with a delicious crust, a perfectly cooked interior, and the amazing Asian flavors of soy sauce and aromatic garlic.

Pan-frying thick cuts of pork chops on the stovetop with high heat often dries out the outside without cooking the inside properly.

In this recipe, we will cook the pork chops in the oven to ensure the inside is cooked through without drying out. Then, switch to broiling on high to get a perfect caramelized crust.

Additionally, this method reduces the mess from splattering hot oil when pan-frying, making it a cleaner and more efficient way to prepare pork chops.

Instructions

  1. Marinate pork chops: In a small bowl, make the marinade by combining soy sauce, sugar, rice vinegar, ground black pepper, and minced garlic. Adjust the seasonings to your liking if needed. Marinate the pork chops for at least one hour; the longer, the better. For best results, marinate overnight in the fridge, covered.
  2. Prepare the oven: Preheat your oven to 375°F. Line a baking sheet with foil or parchment paper to reduce clean-up. Place the marinated pork chops in a single layer on the sheet.
  3. Roast: Roast the pork chops for 20 minutes on the upper middle rack, basting with the drippings occasionally to keep them moist. Move the tray to the top rack close to the broiler. Switch to broil on high (500°F) to create your desired crust, which should take about a few seconds to one minute per side.

  1. Loved the dish but even with low sodium soy sauce it was extremely salty. I chopped it up and put it over rice and veggies with a peanut sauce and that definitely helped. Very tasty and very easy!

  2. Made this tonight when looking for a quick pork recipe to go with some leftover Mac salad – this was so delicious and easy – even my three picky kids asked for seconds!!

    1. So glad to hear!

  3. No need to flip?

  4. how do you make your pork meat not tough. Mine turned out so hard and tough.

  5. Looks good! Can I use boneless pork butt? How Should I adjust the cooking time ? Thanks!
