- 3 lbs bone-in pork chops (at least 1-inch thick)
- 1/4 cup light soy sauce
- 2 tablespoons granulated sugar
- 1 teaspoon rice vinegar
- 1/4 teaspoon ground black pepper
- 5 garlic cloves (peel and mince)
Instructions
- Marinate pork chops: In a small bowl, make the marinade by combining soy sauce, sugar, rice vinegar, ground black pepper, and minced garlic. Adjust the seasonings to your liking if needed. Marinate the pork chops for at least one hour; the longer, the better. For best results, marinate overnight in the fridge, covered.
- Prepare the oven: Preheat your oven to 375°F. Line a baking sheet with foil or parchment paper to reduce clean-up. Place the marinated pork chops in a single layer on the sheet.
- Roast: Roast the pork chops for 20 minutes on the upper middle rack, basting with the drippings occasionally to keep them moist. Move the tray to the top rack close to the broiler. Switch to broil on high (500°F) to create your desired crust, which should take about a few seconds to one minute per side.
