Ah, fried rice.
Fried rice, Cơm Chiên in Vietnamese, is a favorite among many Asian kids and a beloved comfort food for adults. My very first attempt at making fried rice many moons ago was… interesting, to say the least.

My teenage self thought the word ‘fried’ in fried rice meant it had to be crispy. So, being the bright-minded girl I was, I deep-fried the rice in a large pool of oil and pressed it down with a spatula to make it even crispier.
It wasn’t until much later (sadly) that I realized I had it all wrong. After some practice, I can now proudly say I make a mean wok of deliciously fluffy fried rice.

Fried rice is my go-to dish when I run out of dinner ideas or need something the little ones will eat without fuss. It’s a simple meal that makes use of leftover ingredients.
Day-old white rice works best, and for the meat, I use whatever I have on hand, like roasted pork or chicken. You can also make seafood fried rice by adding shrimp, or use canned SPAM if nothing else is available.
Combine these ingredients with frozen vegetables, eggs, and a bit of seasoning, and you’ve got yourself a quick, hearty meal.

Fried Rice with Chinese Sausage (Com Chien Lap Xuong)

Fluffy fried rice with sweet Chinese sausage that comes together in less than 15 minutes. Perfect for busy weeknights and an easy meal that’s sure to please both adults and kids.
Ingredients
- 3 tablespoons neutral oil
- 3 cloves garlic (finely minced)
- 3 Chinese sausages (slice thin)
- 1 1/2 cups frozen peas and carrots
- 2 eggs (beaten)
- 6 cups day-old rice
- 1 tablespoon chicken bouillon powder or mushroom seasoning powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon granulated sugar
- 1/4 teaspoon ground black pepper
- 2 green onions (optional; slice thin)
Instructions
- Sauté garlic: In a large wok, heat up the vegetable oil on medium-high. Add garlic and pan fry until fragrant (about 20 seconds).
- Add Chinese sausage. Stir and cook for 2 minutes or until nicely caramelized on the edges.
- Add frozen vegetables. Stir and cook for another 2 minutes.
- Cook eggs: Clear an area in the wok and add eggs. Stir to break up the eggs until fully cooked and then combined with other ingredients in the wok (about 1 minute)
- Add rice (break up any large clumps of rice with the backside of a wooden spoon).
- Add seasonings and finish: Add bouillon powder, garlic powder, salt sugar and pepper. Toss everything together until combined. Top with green onions (optional) and serve.
