Life can get busy with work, school, and running a house. The last thing you want to think about is what to eat, let alone the cooking and the clean-up afterward.

My go-to choice for something quick is fried rice. Fried rice is typically made with a wok and stove-top. If you don’t have access to those, you’re still in luck. You can still make delicious fried rice in a rice cooker!

99.9% of Asians have a rice cooker. In fact, a rice cooker is one of the first gifts you get from your parents for your dorm room. Although it’s not ideal, cooking fried rice in a rice cooker gets the job done with the same great flavors without the mess and the possibility of setting your house on fire. You might not get the wok hei flavor of the fried rice but it’s all still so, so good.

This fried rice in a rice cooker recipe has all major food groups all in one pot. Simply through everything together: rice, water, seasonings, and your favorite vegetables and proteins.

Set it and forget it for the rest of the day. The rice cooker will keep it warm until you are ready. This is perfect for when you want something quick in between college classes. This is perfect for a tired mom, and also perfect for the average lazy Joe.

Like all fried rice recipes, you can customize the recipe with whatever proteins and vegetables to your liking. Sometimes I like to use SPAM that I cut into small cubes. Toss those bad boys into the rice cooker.

Other times I like to use leftover rotisserie Costco chicken. Throw those babies in as well. Sometimes I have only eggs. Not a problem. Egg fried rice is equally delicious.

For the vegetables, stick to your frozen vegetables such as peas, carrots, and corn to keep the recipe simple and foolproof. Avoid food with a high water content like fresh leafy greens that can make the rice soggy. Other than that rule, you’re all good.

Instructions

  1. Prepare rice: Add rinsed rice and water to a rice cooker.
  2. Add seasonings: Add garlic, Maggi seasonings, salt, bouillon powder, and ground black pepper. Stir to mix the seasonings into the rice grains.
  3. Add protein: Add Chinese sausage slices and crack in two eggs. Press start on the rice cooker.
  4. Stir and serve: Once the rice cooker finishes, open the lid and stir to combine all the ingredients and serve.

    1. Hi Kel! No, eggs won’t overcooked. They are hardboiled perfectly with the steam in the rice cooker. And no, I didn’t find the rice to be greasy with the sausage. It flavored the rice nicely.
