Description

A refreshing Vietnamese iced drink made with sweet winter melon tea and basil seeds. This recipe uses a convenient store-bought winter melon tea brick for quick and easy preparation at home.

  1. Make the tea: Divide the brick into thirds. Use a meat cleaver and mallet if the brick is too hard to cut, or shave it from the edges into delicate, quick-dissolving strips. Bring a pot of water to a boil, add about 1/3 of the tea brick, and let it dissolve completely over low heat then turn off heat.
  2. Add basil seeds: While the mixture is still warm, add the basil seeds. Depending on where you got them, you may want to rinse them first with cold water to remove any dust or debris.
  3. Chill and serve: Allow to cool to room temperature, then transfer to a pitcher and refrigerate. When ready to serve, pour over ice and enjoy.
