- 2 1/2 lbs fish fillets
- 1/4 cup corn starch
- 1/4 cup vegetable oil
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 2 tablespoons minced shallot
- 1/4 cup fish sauce
- 1/4 cup granulated sugar
- Juice of 1 whole lemon/lime (about 2 tablespoons)
Instructions
- Toss fish filets in corn starch and dust off excess.
- Fry: In a large skillet, add vegetable oil and heat on medium high. In batches, fry the filets until golden brown on all sides (about 15 minutes total). Transfer the fried fish to a large platter and set aside.
- Make the sauce: Remove most of the oil from the skillet, leaving about a thin layer. Heat on medium high. Toss in garlic, ginger and shallot. Sauté until fragrant. Add fish sauce, sugar, and lemon juice. Heat until mixture starts to bubble (about 30 seconds) then turn off heat. Toss in fried fish and evenly coat them with sauce.
- Serve: Transfer fish to a platter and serve immediately for best results.
